This salad, although it's made with rice, is actually served cold and it's really tasty! It takes almost no time to make and is very healthy too. It makes a great single-course quick lunch. Here's what you'll need:
3 cups cooked long-grain rice 3 small cans of tunafish 2 cups of cooked diced carrots 2 cups of raw celery, diced tiny 2 cups of black raisins 2 cups of cooked or canned peas
Cook your 3 cups of rice in 6 cups of water with 1 teaspoon of salt. Meanwhile, cook your peas and carrots. Drain. Add all remaining ingredients and mix. Serve cool (or hot if you prefer!)
