It had chicken that had to be pounded/flattened and had some seasonings and/or breading on the outside? If you know the name of the dish that would be wonderful!

The real thing

One of the most frustrating occurrences when making milanesa ether beef or poultry is the breading comming appart while cooking or at serving time..... The simple secret to achieve the best breading to pork ,beef , chicken is # one, have your meet dry ,use paper towels ..the best. Once dry season your meet and then using a fine colander sift flour over, discard excess, once this is done dip in a mixture of egg and two spoons of water.( mix egg and water, do not beat mixture just blend, no froth). Lastly dip into bread crumbs, or Japanese Panko until cover pat on all sides to compact . Have hot oil ready, enough to cover the base of your skillet . Place the meet and let it sizzle for about one or two minutes depending on the thickness of the meeat, check for a golden color , turn and let it cook until golden . Serve and enjoy a crispier and perfectly coated meet.

it sounds more like silpancho. he didn't mention it being dipped in eggs. both dishes are very delicious!

Milanesa de Pollo

What you are describing is Milanesa de Pollo. You pound the chicken until it is flat and thin. Then you dip it in egg to moisten the chicken and then you dip it in seasoned bread crumbs mix and fry it.
