Restaurant Sancho Panza in La Paz endeavours to bring the Spanish Table to South America. And this most recent plate is simply delicious! Huevos Rotos (Broken Eggs)!

This is one of those plates every mother on the Iberian Peninsula makes multiple times a week. Easy, fast and sums up being greater than it's parts. Any wet blanket could correctly say that this is ham & eggs with fried potatoes, a dish known world over. Admittedly, yes.

Yet any chef worth his salt would agree that "it is not what you do but how you do it." And the Spanish have combined uncomplicated ingredients and made alchemy. Then Sancho Panza gives it another twist with a timbal & rightfully famous Serrano Ham and the result made us fall silent as we contemplated sublime fusion in the mouth. My companion commented she'd never had anything quite so good and to her surprise this simplicity led to a pinnicle dining experience. We thought this same recipe would be fabulous as well with Smoked Salmon. But would require a different wine than the Bolivian Red, Aranjuez Terruño, we sipped contentedly.

Pablo Zárate Osuna (Madrileño/owner) has the sensibilities to acheive these little triumphs on a plate. Bravo Don Pablo! Restaurante Sancho Panza succeeds once again in La Paz, Bolivia!
